It's a Miracle...I can COOK!

Just call me Emeril because last night I kicked it up a notch in the kitchen and everyone ate it, no one died and there were no left overs!!! Alright, Alright!

The recipe is from The Square Table: A Collection of Recipes from Oxford

It's called Chicken Cakes with Creole Sauce. It's basically a crab cake with chicken instead of crab meat. I've had my eye on the recipe for quite some time but never felt adventurous enough to tackle it. When my Dad started complaining that I hadn't had them over for dinner in a while, I thought it was the perfect opportunity to enrich my culinary "skills."

What I lack in presentation, I made up for in taste...I think. The menu consisted of the chicken cakes with creole sauce, roasted red potato's, sliced carrots and cheese biscuits. Um, Um, Good!!



With a little luck and A LOT more practice Darrell might be able to start enjoying a nice home cooked meal more often!
